Broccoli Cheddar Soup

We tried this recipe last week and it was sooo good; we all devoured our bowls and went in for seconds! It was super easy and fast to make. I had found a broccoli cheese recipe that I had wanted to try, but it contained very little veggies and a lot of cream and salt. We adjusted the recipes a bit to make it slightly healthier, replacing cream with milk and sneaking in some extra carrots and celery. It wasn't the prettiest soup I have ever made, but it was so good! I recommend having all your appliances and cooking station ready to make it really easy! Adjust the salt & pepper seasoning to your taste. Personally, I prefer less salt.

This is definitely going to become one of our regular soups we make at home. Pair this with a nice fresh salad and you have a delicious lunch! I hope you try it and love it as much as we did.




Ingredients

1 tablespoon butter
1 small onion diced
2 stalks celery, diced
1 cup diced carrots
3 cups fresh broccoli
2 cups chicken broth
1/2 teaspoon thyme
1/2 teaspoon garlic powder
Salt & pepper 
2 tablespoons flour
1 3/4 cups whole milk
1 cup shredded cheddar cheese
1/2 cup parmesan cheese


Directions

1. Heat large saucepan to medium heat, cook butter, onions, carrots and celery until onion softens (3 minutes or so).
2. Add chicken broth (we used water & bullion) broccoli and seasoning. Simmering until the broccoli softens (6-8 minutes)
3. Remove around a cup of the veggies, chop up and set aside. Be careful as they are very hot!
4. Using your blender or an immersion blender, blend the remaining mixture (veggies & broth.) We use our Blendtec and we absolutely love it. Return mixture back to pot & bring to a boil.
5. In a small bowl, slowly stir the milk into the flour together until thickens
6. Slowly whisk the milk mixture into the soup until it gets thick and bubbles
7. Remove from heat, add cheese and the reserved veggies
